Cold Japanese Cuisine Ideas?

Hello!

I am a caterer and am always looking for new ideas for room temperature food. I am putting together bento boxes for corporate lunches, but they absolutely must be room-temperature…which means absolutely NO raw food (raw sushi) and no hot dishes.

Any creative ideas such as cold somen noodles? Recipes please!

Here is what I have so far…
-Various “cooked” sushi rolls
-Japanese-style garden salad with various Japanese-inspired dressings
-Edamame

Any other ideas? Remember the RULES: Everything must be fully cooked and room-temp.

Cold Tempura is NASTY and like I said before, I have the whole sushi thing down already.
